I downloaded a theme from a website, and my phone said is was set to block installation of applications not sourced in Android Market.

Can you only get apps from Android Market? Seems ridiculous.

I've heard the term 'side loading'. Does that have to do with loading apps outside of Android Market?

Yes that's exactly what sideloading is. Loading an app or theme OUTSIDE the market. You can only get apps from the market unless you follow the sticky threads in here and modify your phone to be able to sideload apps.
