obviously talk on the phone.
with supported headsets, you can listen to music
control your music with the headset.
pressing the main button can open up voice dial
then you can always tether to your phone through Bluetooth (never did figure this out though)
and you can transfer files over BT to another BT device (like another phone)
If you have a Bluetooth adapter on your PC, you can pair your phone up with that and have Bluetooth audio support so your phone can play through your PC speakers.
If you get an OBD-II Bluetooth adapter (cheap ones are like $30) you can connect your phone to your car's engine computer and display realtime information from it. Very helpful especially in my case, my car doesn't even have a digital odometer or tachometer. However, the phone will display information like MPG, throttle position, and more technical details, that you normally only get on newer, higher end cars.
Old picture from about a year ago, back when I had my Eris and only 150k miles on my car. But you get the idea. My '99 Escort has a dash display you would expect on a brand new car (lol). Not bad for something with no cruise control. Too bad the engine computer doesn't report the fuel level in my case, that would be nice for distance until empty.
