Unfortunately there is no .tar file but it gives some building instructions and the txt file for kernel has some talk of .tar. But I think If I do that I'll just be building the kernel. But I'm going to try.

Yes. This is a very common practice... It isn't difficult at all. It's just, this phone wasn't that big before the update anyway, so no phones were sold with the old firmware. (I don't guess)
Edit: One must be on stock ROM for this action. lol

On another note, I'm happy to see this thread gaining popularity.
I will add CM11 M10 to the ROM list on OP.
