I've searched around and I can't find any explanation of what the "Build Number " is and what the different ones are. GRI40, GRH78, etc.
Is one better then another? Can it be changed for each phone?

That would be the version of Android installed. It basically goes in alphanumeric order (higher letter alphabetically means higher major build version; higher number means higher minor build version). 2.3.1 is GRH78, and 2.3.3 is GRI40 for instance.
