I'm not totally sure what you're asking but I'll venture to guess you're talking about creating separate folders to put your pictures in? You can download the file browser Astro from the Market. It will let you create folders and move files around on the sdcard. Be careful with it as you can cause all sorts of problems if you delete or move the wrong files. All pictures are stored in sdcard\dcim\camera. You can't control (as far as I know) what folders the camera uses for the pics but you can move them around after it places them in that folder.
