Can I upgrade to 2.1 using the USB cable?

Title says it all, can I have 2.1 on my Eris using the USB cable included or do I need to by an adapter to use the micro SD card and get the update?

If you're talking about the leaked version, then yes you can connect by usb and put the PB000IMG on your SD Card. There are tutorials on flashing on this forum as well as XDA.

Are you running 1.5 right now? If so I would root your phone instead

Either way there are tutorials on both forums, but the short of it is you don't need to buy an adapter

mount your phone then drag the the zip file over....but keep in mind this is an leak (assuming thats what you mean by .zip file) and not the official version.
