bit late to this thread, don't know if anyone knows, or maybe it's a new thing for 2.3, but if you click "inline", the forwarded text part of the email get's put in the body and you can cut and paste or edit it.
That's on gmail app though.
OK, I have a Galaxy 8.9 tablet using the Samsung android keyboard. I can't figure out how to cut copy and paste. I see it appear every once in a while and see little flags where the cursor is. I am going insane. Can anybody help me. I don't have the phone, so it's a little different. (I think)

PS I've been on PC for years, this is a whole new confusing thing for me.
