I just rooted my 3vo yesterday and installed backup and Meanrom. Forgot what version, but anyways its sort of boring. Are there any roms that really bring something new to the table? I just want to be amazed at what my 3D can really do. Also Meanrom isn't bad with the battery life and all, the just I want something different from stock. And last, could when installing another room do I have to do a backup then install it over current or delete current rom, install stock, and reroot and then custom rom?

To the last question just follow dev instructions as far as wiping before you install. Always nandroid though. If your looking for a different look there are plenty of themes compatible with meanROM. Honeysense is nice there's also a blueblend transparent edition that's really cool. Imo meanROM is fastest out right now.
