How do I turn off the character count on text messages so that it sends one long message instead of multiple short ones?

Text messages are limited to 160 characters by the SMS protocol used; the only way to override this is to use a messaging client that allows sending via MMS, which doesn't have this restriction. However sending & receiving MMS requires a data connection, unlike SMS.

Is this something new for the galaxy s6? My husband has an s5 and doesn't have this problem.
Is there a setting in the Samsung messaging client that allows it, perhaps?

Can you tell me where to find that to check?
