So is this cool to treat just like the rooted stock rom....meaning, being able to change launchers and delete some of the ROMs default apps that don't suit me and such things as this without issues

I have removed the launcher after replacing it of course and no problems. Didn't remove anything else, kind of use it all, but i don't think you should run into any problems as long as they are not google apps. It wouldn't hurt to back it up before removing it, just in case.

backup your current rom and go for it, if anything happens which i doub you can reboot into cwm and restore your backup...

The keyboard settings for default are the one of the only things that I see wrong, no matter what I do, I can't use any other keyboard but the default. I like the IPhone emulator one, but it goes away after I make it the default, and gets replaced by the android keyboard. The other problem I had was with autorotation, but using this app called autorotat, seems to have cured that.
