It looks like the official CyanogenMod 7 ROM is getting ready to be a final build soon. I might just wait for the final and use that for a week to see if I like it. 
I tried one of the earlier nightlies a couple weeks back and it seemed pretty decent. I do prefer the speed and efficiency of the vanilla AOSP ROMs though.
