Root Combining the best of Roms

Question:

I know that I can bring in the camera features (as per this link : http://androidforums.com/desire-all-things-root/357496-gingervillain-camera-focus.html) but I am wondering if anyone knows if I can use or remove a feature from a Rom? (ie. I dont like the way HTC Sense does Messaging, so I would like to use the stock Gingerbread one. Can I remove the HTC sense Messaging and just have the gingerbread one?)

You can remove the htc one but Im not sure if you can simply add the android one or if it needs to be compiled with it in, I know the MoDaCo online kitchen allows you to add it to the build for sense roms.
