Concern about the security

I got a new samsung galaxy s2 yesterday. as part of set up, i had to submit my google account credentials. I am using gmail application which does not have a 'sign out' option! Back up data option is off, but i have to make it on whenever i try to download something from android market. Now, my concern is what if my phone gets stolen or lost: (i am considering if its locking code gets hacked as well)

as I can change my password (and best case scenario - back up data is off), no new data will be there, but old emails will be.

Is there any option that I will be able to stop the criminal from reading that data?
Or is it best as a security measure that I just create another google account for android uses for safety purpose?
