Root Consequences of downgrading ROM?

If I downgrade the ROM on my GSM Hero, will that unfix some of the things that the latest firmware have supposedly fixed (signal etc)?

I'm on Three (UK) and am using the latest ROM supplied for the network.

I'd like to give 2.1 a shot, but I don't want to do it at the expense of not having a working phone.

Any issues you had on 1.5 should be fixed in the 2.1 time, signal is normally related to your broadband version which will not change when changing.g roms
