Root Creating a custom ROM

I just updated to 2.2 after semi bricking my phone while rooting it in 2.1. I was wondering how I could create a custom ROM so that I could have all of my stuff, only with a rooted phone. Could anyone tell me how to do this, so I could just flash it on the recovery screen? I run Ubuntu 10.10, so I don't want any Windows applications, because Wine doesn't run all of them. Also, I don't want to take the time and space to create a VM.

if you have a custom recovery you can just slap a backup tar a rom and a kernel in the appropriate folders .zips in sdx\zip and tar in sdx\backups
restore the backup tar flash the rom and kernel
