Root Customizing ROM Apps

I'm customizing a CM7 based ROM and I wonder is it best to leave all apps out of system/app that aren't critical and install them later? Ex: I know I will always need Gmail so why not dump it in the app folder? Is there any advantage/disadvantage assuming there is plenty of space in internal memory?

Are apps better for speed or the battery when moved to the SD card?

The apps that are in the /system/app directory can't be updated unless somthing (that I don't know) is done, then the update part is in the /data/apps directory. Apps that are in the /system/app directory also have access that the other apps wouldn't have. As far as speed or battery, there isn't any benifit there, unless you want to move them to you SDcard.

This was mainly for me to keep large apps like Gmail and Maps/Nav in /system so I wouldn't be having to wait and waste bandwidth downloading them constantly. Probably a moot point anyway since now I keep a copy of the most recent apks on my SD card so as long as I have a file manager in /system I just reinstall them.

Also, I'm not perfectly clear on your answer on whether or not there is any battery life or performance benefit to moving an app to the SD card.

They would be slower if you use something like Apps2SD. It would allow you to use a partition on your SDcard to run the apps as if they were on the internal memory.
And if you know how to move your apps then you could just move them to /data/apps
