I know Oppo phones with Color OS(a heavily modified version of Android) locks users to the stock Color OS launcher, and it can't be changed. Vivo are from the same manufacturer as Oppo(BBK Electronics, who also makes Oneplus phones). and their Funtouch OS is pretty much the same thing as Oppo's Color OS. So wouldn't surprise me that Vivo also locks you to their stock Funtouch OS launcher.

AFAIK really the only way to change it, is to root and somehow hack the device.

is there any non root way of disabling the default launcher? if default launcher is not available then will the system be forced to use Nova?

The default launcher is baked into the firmware, and can't be removed or disabled, not without root. There is no non-root way of getting around it AFAICT.

Oppo started locking their launchers back when they were producing devices with Android 6 firmware, and Vivo very likely was the same.

Also FYI, China version Huawei/Honor(EMUI) and OnePlus(Hydrogen OS) phones also have locked launchers, that can't be changed.

Why some Chinese phone-makers do this, stop people using third-party launchers on their phones? I don't know.
