Was wondering if anyone could tell me how this is possible? I have so many Sony put on that ive never used and dont want. Also, is it possible to create folders? Like for games etc. Thanks

Rooting doesn't remove anything, only gives access to Super User.
To remove the apps you would have to be able to access the /system partition.
Bare in mind, removing those apps won't gain you any space.
On the stock menu it is not possible to create folders in the menu. For this you will need to use a Launcher app from the Market
it is not possible to uninstall nor remove the icon of a pre-installed app from the phone. You could however use a Launcher app that gives you that option. It has the Hide Icon option once on the app menu.
I've not rooted this phone yet but when I rooted my X10 I could remove stock apps and it freed up space... Confused.com
Just the crap that comes with it like music and video unlimited, news and weather, gmail, google talk, google +, officesuite etc. I don't use any of it and I want it gone. They sure did add a lot of apps to it compared to my old iphone.
