Help deleting user installed apps?

Today I returned my galaxy s 4g. The sales guy said I was the first person he met who retuned a galaxy for a g2. I just didn't like the galaxy. I've got 2 questions.

1.. how do I delete an app that I've installed? On the other phone id just hold on the icon and a dialog would pop up offering a delete option. When I hold down an app icon on the g2 it just brings it to the desktop.

2. How do I name a folder once I create one on the desktop?

1. uninstall from market, under My Apps, or go into Menu, Settings, Applications, Manage Applications. scroll down to the app in question, touch it, then hit Uninstall.

2. Click on the folder. Long press on the name at the top. Should be able to handle it from there
