Don't Like GMail App

I'd prefer to keep all emails under email instead of going through GMail app to access them. Biggest problem I have is you cannot sort and list for unread emails through the GMail app but when you setup independent email accounts you can do this easily.

Can I set it gmail emails without the gmail app?

You can use K-9 mail to replace the gmail app
 
I liked K9 when I tried it except for one thing. The desktop icon didn't have any indicator telling me when I had a new email. I had to listen for a beep or check my notifications bar.
Also I could never figure out how to do a "select all emails" and "mark as read" or "mark as spam".

Strange because I have a notification in my notification bar and on the K9 Icon ( but for that I use GoLauncher and the notification addon)

For select all, it's easy. When you see the list of your emails, just press the "properties" button on your phone and you will see "select all" option
