Root Fascinate rooter looking for suggestions

Greetings and salutations. I've been lurking here for a few weeks and finally worked up the nerve to root my Fascinate yesterday using the guide posted in your sticky. Everything went without a hitch, and so far have done the following:

Removed (via backup to SDcard):

(also disabled Touchwiz launcher via rename to .old)

Added:

Launcher Pro Plus (had this before rooting)
Root Explorer
Titanium Backup

Would love to hear some ideas on what else could be added or removed to speed up or otherwise enhance my Android experience. Oh and if anyone could tell me why there is always a "Market" service running when I reboot my phone, what it does, and whether or not it can be safely disabled, that would be awesome. It eats up 17-20 MB and as far as I can tell killing it doesn't prevent the market from working.

Also, I've been skimming over discussions and tutorials regarding ROMs, kernels, and lagfixes (which involves both ROMs and kernels?) and while it sounds interesting, it also sounds a bit scary, and seems people have very mixed results.

no need to install voodoo unless you feel confident you can uninstall voodoo without any problems.
