CM actually adds a lot of settings that aren't configurable in stock Android either. The GUI of CM7 looks very much like that of vanilla android. The similarities end there IMO. CM7 is just as much a custom ROM as is anything running Sense, Touchwiz, Blur, etc. when comparing it to vanilla android.After browsing though the settings I'm seeing lots of options that I never saw on my stock Samsung Vibrant, stock Motorola Cliq/Cliq XT or stock htc Evo 4G. This leaves me with a question; Why do manufacturers cripple Android when they make a phone? By "cripple" I mean there are lots of things in CyanogenMod that are nowhere in the other phones I listed.
I would assume that manufacturers don't add a lot of these options into their roms because they don't want people that don't know what they are doing to change crucial settings. CM gives you a disclaimer that basically waives any and all liability they may have to ill effects resulting from you tinkering with their ROM. HTC, Moto, etc. don't really have that luxury (well I guess they COULD, but it would be pretty bad business).
