Immersive mode is a developer optimization and, as such, is not necessarily going to be something that is currently on most apps.

Here's a list of the apps that currently support it:

• Comixology
• Dayframe
• Diceplayer
• Google Play Books
• Google Search
• Hangouts (when viewing images)
• Manga Plus Reader
• Moon+ Reader
• MX Player
• Perfect Pixel Checker V2
• QuickPic
• Train Crisis
