Future Updates? How do they work?

In the future, if there is an update to the AT&T version of the S4, how will it be delivered? OTA? Something called Kies?

If it is delivered via Kies, would it be a good idea to backup all apps and associated data before I perform the upgrade? Or is it like an OTA update in which the update is applied over the top of what's already on the system?

Both! You can update via Kies or OTA if you go to Settings -> About device -> Software update. The default settings are to automatically check for updates and download over wi-fi. I think it's always a good idea to backup that stuff in case something goes wrong during the update (e.g. random hard reset of phone or, if using Kies, the PC).
 
Funnily enough my (Vodafone UK) did an OTA update yesterday. Little alert came up, and away we went.
