Could I use this to restore the phone to stock if I screw something up or have to send it back? I came from a behold 2 to this, and I wanna tweak it a little, but would like to have a copy of stock as a backup.

Don't worry, people have you covered for this. If every you need the stock ROM just go to the G2 Development section and look around.
