Congrats on the G2s. I had a hard time at the store too because they tried to tell me I would lose unlimited. Rooting and flashing recovery is fairly easy. Although I should say I had a bit of trouble with root because I forgot one detail.

I'm pretty sure its relatively simple to go back to stock especially since you aren't unlocking the bootloader, but rather just bypassing it with this tool.I used to have the Verizon variant and can confirm that it works. A quick review of the xda threads shows that there are a ton of ROMs for it, too.
But I guess I'm really wondering is if I can lock everything back up in order to trade it in on the JUMP program down the road. . .
I'm starting to think that the Note 3 might be a tad too big. . . and although I use the Pen on the Note 10.1 constantly, I haven't really used it that much on the Note 3.
