Help Galaxy S2 Contacts

I have previously (on my Galaxy S) accessed my contacts from the SIM.
When I save a new contact I always add it to the SIM.
I have never bothered with saving contacts to the phone's memory (I want to ensure I have all contacts available if I were to put the SIM into another phone etc.).

Now...I have purchased a Galaxy S2 and everything changes. Please help!

I don't seem to be able to operate from my SIM when it comes to contacts anymore. Is this correct?

I imported my contacts from the SIM to the phone's memory.
I now see I have more "fields" available, for example I can store a nickname for somebody.
If I give them a nickname, export the contact to my SIM and then import it again, the nickname is gone.
I believe there are only a few fields which can be stored on the SIM.

If I store an email address for a contact and repeat the above task, the email address disappears.

I am not happy about this method of maintaining my contacts as I can see myself losing contact data.

What is the best way to maintain contacts data?

In testing, I have exported a new (imaginary) contact to my SIM.
Now I cannot delete this test contact. How can I do this using the Galaxy S2?

It appears as though Google are trying to force us to continually sync with their server and have our contacts maintained by their hardware.
No doubt they jump with joy at having not only all our phone/browsing habits etc etc but now they want information on all of our contacts in one of their databases too.

Somebody explain how all this works...please
