It started as a food truck (that I've eatin at many times) and they just open a restaurant!!!

The lengua is AWESOME:

triple-cooked Colorado beef tongue–served crispy, avocado, diced onion & cilantro, roasted tomatillo salsa, guajillo honey mayo

Also very awesome:

pork belly “agridulce”

sweet & sour braised pork belly, candied garlic, cabbage & cilantro slaw, braising jus

Thats on the future Mrs's hit list tomorrow!!!! The box is catered for the game (with open bar:D) so we didn't want to do a full on sit down dinner before the game.

Risotto is a very creamy rice (aborio) and is a classic italian dish. It takes a little patience to make but isn't hard.

If I recall your from the south??? Imagine rice with a grits like take? If your up to it I'll post a recipe.
 
Trent, your opinion on this & then I'll leave you guys for the evening ( maybe ). Gotta start thinking about my fantasy football draft so w/ that said for QB : Tom Brady or Aaron Rodgers or somebody else ? Your thought sir...
