I replaced my battery in my galaxy S6 from a 2,550 mAh to a 3,250 mAh battery. How do I get the phone to recognize that its has a lager capacity.

Well, how did u change the removable battery???
Seeing as the S6 isn't designed to have a replaceable battery, all you can do is hope that the firmware will adapt and report the correct capacity over time.
Try the old-skool method of charging to 100%, using until the "low battery" warning appears, then repeat the cycle a couple of times. If nothing changes then the 'fuel gauge' is hard-coded, I'm afraid.
