When changing the minutes in either the start or end time. For instance if I make a change to the start time minutes, the ending minutes time also changes. That is a good thing if the start/end time difference is still 2 hours. Ocassionally through, just trying to change the end time minutes the start will also change. And at times so will the hour. Not sure if this is a part of the time issue you mention above or not.
By the way, when I started using Gemini my phone was running 1.5. Last week I received the 2.1 OTA update. I don't know if it was happening with 1.5 or not. Or if it makes a difference.

Generally, snooze time is not related to the calendar API, it is a value that could be set independently, at the OS level, however, I could not find such settings in my phone. Maybe Calendar Snooze, mentioned by @jae_63 will help you. I will pay attention on this topic and maybe will find solution which can be implemented in Gemini Calendar.Hi everybody...
