There were rumors that gingerbread would reduce fragmentation by implementing more options on the UI side of things. Also read a lot of posts saying how they tried to tie in the entire UI using more consistent icons, making it seem like a whole package.
Point is these were all rumors and speculation. Heck maybe they're true and what's being shown is just one of the themes or something, and just happens to be really ugly. We really don't know. All those speculations were wayyy before we really had any idea what gingerbread was going to consist of and probably should be disregarded.

Absolutely correct. Assuming most will root they're phones and load a custom rom when available ( I know alot dont, i dont know why but its your choice). More than enough ways to customize. Very talented developers out there that do a excellent job of providing all kinds of goodies for your customizing needs.

It's doubtful that stock will ever make custom skins irrelevant unless it really pushes the bounds of what we have seen so far on Android. I'm talking 3.0 total overhaul changes.
As for the skins, Sense provides a unified experience, Touchwiz is iOS (without actually being iOS), and LauncherPro has some of the most deep customizations out there only rivaled right now by ADW.
I think a more correct model for Google to follow would be to run total stock and have the skins done afterwards or integrated like the way Beautiful Widgets or ADW has themes. At the very least, users could get updates in a timely manner. Or charge for the skins (LP and ADW already do a certain extent) and give the consumers more choice.
Until either Google does something groundbreaking with the UI or figures out a way for all of these skins to work together without hindering updates, I doubt stock will ever be anything but for purists.
As far as the appearance so far, my custom ROM and skin I use looks vastly more advanced and unique than what Google has delivered, but lets hope that Gingerbread provides more performance increases rather superficial changes. Android still has a few kinks to work out and hardware acceleration would be a good start.
