A friend of mine makes custom and commercial smokers and some of the set-ups he creates pretty much do everything with almost no effort on your part due to electronic controlling and designs. They are frigging awesome. I have a first round prototype that doesn't even resemble anything he makes these days. They aren't cheap but you would never have to buy another one! By the way, this was our excitement yesterday. It was headed straight for us but dissipated a quarter mile away. The best part? The damn tornado siren is right across the road from us and I was working on my truck just outside the garage when it went off. I didn't smack my head too hard on the hood
