Root Help on updating to the latest OTA?

I reading over the Rooting for dummies page and I didn't really understand how to update to the latest OTA (sorry for the dumb question) I do have a rooted evo and I am running the Valepak 3.0 nonsense ROM.

You don't have to do the OTA update. Find a ROM that is based on the 3.70 release and flash that. Make sure you have the updated radio/wimax also when you do it so as to not have issues there.
