I am wondering if anyone can help me disable my text preview on my lock bar. I tried going into my privacy settings and I don't have any lock bar settings in there. Also, I've tried the apps and I don't like them. Help please?

Menu -> Setting -> Privacy
Uncheck the option to "Display message text on lock screen"

Oops, I guess I didn't read that closely enough. Are you rooted? Running and custom ROM's? What version of Sense are you running?

Um it's not rooted. As for everything else that you asked, I really have no idea.

Okay. So you're running the stock ROM with Sense 2.x. When you go to Menu>Settings>Privacy what options are available? Mine shows 3 different options: Display message on lock screen, Back up my settings, and Automatic restore. If I have "Display message on lock screen" checked, when I get a text message, it will show on the lock screen. If I uncheck it, the message does not show on the lockscreen.
It would be very unusual if your settings didn't have this option. Also you're calling it a lock bar. Are you running an app like WidgetLocker that changes your lockscreen from the stock Sense lockscreen to something else? If so, perhaps there is a setting in the app that controls whether the text is being displayed.
