Root Help - Save Current State While Flashing Rom

I'm gonna try getting CM7 back on my phone. Thing is that I've downloaded way too many applications to re-install every single one. I have all of my applications moved to my SD card. Is there a way to flash the rom and keep all of my applications installed with their data intact?

Also, for some reason I recovered a backup last month when I was trying to go back to stock from CM7 and my system says I'm running 2.3.4, it never went back to saying 2.2 after the recovery.

You don't want to restore data when going from FROYO (2.2) to Gingerbread (2.3). You'll get bootloops among other issues.

You'll need to reinstall your apps for best results. You could try doing a titanium backup of just the apps and then restore the apps once you flash CM7. but don't restore data.

As for your system still saying that you have 2.3.4, it sounds like you are using that Thunderbolt build.prop. You're not actually running gingerbread. the build.prop just says that to fool the Market into thinking you have a Thunderbolt instead of a Triumph.
 
Doing a backup with CWM will save your current setup apps and all, but if you're switching ROMs you want to use something like titanium backup. Like mantera said going from one ROM to another you should not restore the data, it can cause issues.
