Once you open an album,instead of tapping on the 1st (top) photo,just tap on any pic below it & you'll be able to view your photos w/o all the extra production values you're looking to avoid.
A sideway swipe on the pic will bring up the next photo in the album.

As far as I can tell, if you don't click on the video at the top, it won't play. My volume is set to off by default.
Click on the speaker icon I the lower left and it should toggle the sound off. Mine stays off when I select that even if I exit the app and re-enter.
I can't find a setting to turn that off yet, if it exists.
