What do you mean "all the apps that came on the phone"? Do you mean your app drawer is empty? Did you get rid of all the bloatware too? Gmail gone? Maps? Blockbuster?
Your messaging app is in your stock mail app as the second icon in the bottom of the screen upon opening it. You should still be able to plant a widgit on your homescreen for messaging.
If all this stuff is gone and rebooting your phone doesn't bring it back, a hard reset is probably your only option.
Why did you want to go back to stock messaging anyway?
