Hello, If I change my Home to PandaHome/OpenHome how does it work? Will I still be able to set my Home with Widgets/Apps of my choosing like I do now or does it change everything and limit me to certain things? Will I have as many screens? What happens to the TouchFlo, will it still work? Thanks

You won't have the HTC SenseUI widgets available, but anything else will work.

Will I have as many screens?

Panda Home allows up to (I think) seven. The others I don't know about.

What happens to the TouchFlo, will it still work?

No, because it's replaced by the new Home app.

The "HTC Widgets" found on the Hero. They're only available with SenseUI/TouchFLO.
