Root How do I backup with Nandroid?

[ned4spd8874]

Yet another noob question...

How do I backup my phone with Nandroid? I'm running unRevoked/Virtuous, but when I boot into recovery, I don't see a backup option. I tried using the backup ROM option under ROM Manager, but all it does is take me to the same recovery screen. I know I've backup up before...could Nandroid have removed somehow? If so, how do I get it back?

Thanks!

Do you not see the option for backup and restore in recovery?

No, I can't even get to that screen now. I think my phone is jacked. It keeps deleting apps every time I reboot now.
