You must be talking about the one in the Touchwiz dock? If you want to have the Gmail app icon there instead, go into the App drawer by pressing the Applications button in the dock, hit menu, view type, customizable grid, menu again, and edit. This will allow you to click and hold on icons and move them around as you please.
