Root How do I install a custom ROM?

So I've just rooted using the one click root found on XDA.

I've been doing literally all of the reading I can for the past month or so on the various ROMs developed for the Captivate. However, though I have a general idea of what I need to do, can anyone either

A) Repost a link showing how to install a custom ROM after root. (the more detailed, the better)

or

B) Type up a step by step process themselves.

I'm looking to find the fastest one out there. I'm interested highly in the latest Cognition build, as well as Perception.


Also, I've installed Ryan's OCLF after root. Should I uninstall this lag fix before I install a new ROM?

And finally, how would I update to a newer build of the current ROM I may use/update to a different ROM altogether. Is there any deletion process?

Get Rom manager, if already rooted. Make a backup of your current rom just in case. Put that on a SD card. Then download the rom you want and put it in the main system folder. Use Rom manager to flash the rom. Its pretty easy.
 
Before you flash for the first time. Take a few minutes and make sure you can get into download mode.

Also, yes you need to undo your OCLF before flashing.

after trying out both Cognition and Perception, i've settled on the latest build of Assonance.
Cog was shutting down while charging overnight and neither of them had great battery life.
Assonance has great battery life, no problems i have found, great GPS, and has a killer dark and green theme to it:
