Root How to delete stock apps?

You don't need to delete it, Head to Settings -> Applications -> Manage Applications -> All -> Browser/Internet -> Clear Defaults. The next time you access something internet related, you should get an option of what you want to use and set as default, just set Dolphin and you're sorted.
When i click the brower button it begins to load the default browser for less than a second and then cuts to dolphin browser, then i go back to homepage and click it again and it just loads the default browser (which does nothing).
Says no defaults set on default browser and then says default is set for dolphin.
It'll be easier just to set your shortcut to Dolphin then. I'm not entirely sure how safe deleting the stock browser would be.
How do i delete other stock apps?
Forget that, i don't really have any apps that i need to delete...how safe is it just deleting folders of apps which i no longer have which are still there despite not having the app?

If you want to remove pre-installed carrier bloatware / apps that came with the phone which were installed by the carrier, such as game demos, sound hound and the like, then you would need to root your phone.
You need to bear in mind that rooting your phone voids your warrantee, however there are also positives to doing so (like the removal of pre-installed apps).
Once you have rooted, it is then possible to install “root only” apps, such as Titanium Backup. TB allows you to remove any apps (including pre-installed carrier apps). It is worth noting that some apps, even if you don’t use/want them, could be used by your system, so it is important not to just start removing apps. Please also note that if it is safe to remove apps for one device, it doesn't necessarily mean that the app is safe to remove for ALL devices. It really depends on the services provided by the app as specified by the particular rom/build. More importantly, system apps are not easily restorable like simply installing an .apk file. And once deleted, even a factory reset will not recover them. You will have to locate and flash a stock rom image to get them back.
One option in TB allows you to freeze apps – I would suggest that you do this initially, as you can always unfreeze the app if you notice that you are experiencing any issues. If, once apps are frozen, your phone is behaving normally, then you can look to removing them. It would be a good idea to freeze apps individually, so that you will notice if each one affects your phone adversely.
With the freeze option, if you don't want to be notified about updates from the market, then you need to also enable the option Preferences --> Freezer Settings --> Remove Market Entry
If you install custom ROM's once you're rooted, that would mean that you wouldn't have any more carrier bloatware on your phone anyway... unless you mean you want to remove other apps that came pre-installed with a custom ROM?

Yeah after my pre-edit post above i realised i don't really need to do anything!
Do you know if it is safe to delete app folders which i no longer have the app after installing my new ROM, but i am left with the folder of information i guess.
Do you mean apps that you have had installed, but have taken off your phone? Do you mean off the SD card?
Apps that show up when you connect your phone to your pc via usb.

Sorry... it's been a long day and I'm loosing my mind a little... don't understand what you mean...
Do you mean there are folders for apps that you have removed showing on the SD card when you plug your phone in to your computer? If so, then you should be good to remove them.
