You can basically just boot into recovery, do all the wipes 3 times, then flash the next rom. Just keep in mind whether you are running an ext4 rom, and whether you are flashing another ext4 rom, so that you will be using the correct version of Clockwork.

Bonsai doesn't require the wipe protocol. It does all the neccesary ones for you. It also does a nandroid which I never do. I just back up my apps, call log and sms via mybackup pro
a nandroid backup is done from recovery and is like a restore point in windows. Gives you something good to go back to in case you screw something up.
To go back to 2.2 you can just odin with the stock dk28 tar file. Check out this thread at xda. Check out the link in the first post. Should take you back.
