I often check the battery use page in the settings. Although it has a "refresh" option, it still shows several hours of battery use... even if I remove and replace the battery.

I am pretty sure you have to fully charge it to 100% to have the usage statistics reset to zero. That is why the chart has the "time on battery" and the "total time" at the bottom.
The chart shows those two different times because you can partially discharge and recharge the battery and not have them reset. Once your battery if fully charged again, they are reset to zero.
