Root How to return to stock??

I rooted with Z4 and currently am running APEX 1.3.1

I want to return to 2.2 stock unrooted.

I see in rom manager there is a rom called 2.2 stock. The only problem is it says you must be on 2.1, which I'm not.

What do I need to do go back to good old stock?

If you made a backup of your old stock ROM (which you should have done before you flashed your first rom) you can flash that. From there you will still have a rooted phone, but it will be stock.

Depending on when you made that backup, and google has had an OTA for the DX since then (like from 2.2 to 2.2.1) it will prompt you to upgrade, and if you do an OTA upgrade, you should lose root access. If you already had the most up to date software, then there is a way to unroot the phone, but I don't know it. However, I'm sure someone on this forum can help you

Do the above then use z4 to unroot. Then I'd do a factory data reset for good measure.

Unfortunately I never made a back up before flashing a rom. Do I have any other options?

You can probably find a stock rom on Xdaforums. Its where I got mine.
