I connect my S2 to Samsung Keis and I cannot find any update.
My S2 show version 2.3.3, baseband version DXKI1, build number DXKI2.
How to update to 2.3.4 and where to download it?

If you are checking via Kies it could be that your operator or geographic location, Indonsia, Malaysia, Phillipines, Singapore, Vietnam, have not released 2.3.4 yet.

Your other option is to update your firmware using Odin if a compatible firmware for DX (your location) 2.3.4 is available.

This is correct.
Kies will only let you download official carrier branded firmware.
If you want updates earlier, then you will have to invalidate your warranty and go intratech's Odin route

I know this is probably a stupid question but I'm still very unsure about rooting, so to flash with Odin will I need to have rooted my phone or can I follow the steps and upgrade from 2.3.3 to 2.3.4 without rooting via Odin?
 
Just follow the guide in the links.
You do not need to be rooted to flash via odin if all you want to do is upgrade official firmwares.
You do need to be rooted if you want to install 3rd party custom roms, but thats another story.... :)

(appears that 2.3.3 is the latest firmware for your region unless you change to a custom ROM)

2. Not needed for rooting these days.

Let me google that for you

No its very straight-forward.

If you want to go to a custom rom then you must root your device. Look at the "build number" which is the last item in your "about phone" screen for the last 3 characters eg KE3, KG5 etc)
Then root your device via the chainfire CF-Root links with the appropriate firmware CF-root file. This requires you to do so via odin.
You will then be rooted (note the yellow triangle on the bootup screen)
Then decide which custom rom you want. Most will be on KH3 or KI3 by now, but this will not matter as far as your rooted phone is concerned. ie. you dont need it to match your current version of root or firmware
download the rom (usually a .zip) and copy it to the sdcard, unless told otherwise in the custom rom instructions (eg could be another Odin job)
The custom rom will normally be a .zip file installed via CWM recovery. This is a feature of rooting. with the phone off, press HOME+VOL-UP+POWER all at the same time. This starts CWM recovery mode.
one of the options in this app is to install zip on sd card
just navigate to the .zip file you copied and the begin the install
When you install the custom rom it should all just update its kernel, baseband etc. as if by magic!

does contain a step-by-step guide with pictures and a video on how to root and flash an alternative ROM.

It does require a certain amount of reading and study before you attempt this.

Otherwise I would suggest waiting to see if your stock firmware is updated to 2.3.4 in the near future. This will depend on your service provider. Maybe you could give them a call and see if they know when the 2.3.4 update is going to be released officially by them.
