how to update while rooted.

I have an HTC Evo 4g Lte. Sprint. My phone is rooted with S-on. With Evilution ROM
I read that this model will get a update to sense 5 and Android 4.3 later this year
My question is how to update or whether I could update my phone being rooted.

Being rooted, probably (although you'll probably have to root it again after the update). Running a non-stock ROM, probably not. (And updating will return you to a stock ROM. Reinstalling Evilution after updating will bring you back to where you are now. What you want is an updated Evilution ROM.)

Also, if you're expecting your carrier to send-out a new Android update later on this year, then you'd typically want to revert back to stock since a custom ROM is going to keep you from installing an over-the-air (OTA) Android update (you wouldn't want to try to install an OTA while you've got a custom ROM installed anyways--that's definitely a bad idea).
