I need a simple answer, from an experienced Eris user

None. The Eris can only be rooted from 1.5. Then you download the 2.1 root ROM, and flash it. Then you have root.

But if you're on a leak, you cannot root at the moment. They are working on downgrades back to 1.5 to root, but they haven't figured it out yet.
 
Leaks do not equal root. Completely different. Leaks are just that, leaks (working versions) of the official 2.1 being QCed by Verizon before the official OTA.

For root, just go to the root section for plenty of explanations on what it is and why it's so different. Basically, it gives you complete control over your phone if you know what you're doing.
 
I've heard of people with 2.1 that have a rooted phone. Is this because they rooted before the leak?

With root, developers have developed ROMs that run 2.1, but with root (meaning they are completely customizable, such as removing unwanted Verizon/HTC apps). And, yes, they rooted without installing one of the leaks. Currently you can only root from 1.5. So those who installed the leaks cannot root until root is achieved with those leaks, or there is a way to downgrade from the 2.1 leaked version back to stock 1.5.

Yes, it would be a ROM, but it's not a ROM with root access. Unless they have one of the ROMs that devs have created with root based on the 2.1 leak ROM.
