I discovered an app called Notpod (originally called iTunes Agent) that will allow you to put your iTunes music on your Captivate.

The website has much more detailed instructions than I can deliver here, but suffice to say that it is a relatively painless process. It's not as automatic as "syncing" your phone, but then I never did like to sync my iPhone anyway. I prefer manual control. At any rate, what it boils down to is that you create a playlist in iTunes (after you install Notpod) that remains resident in iTunes, and you can add to and subtract from it. When you plug in your Captivate, Notpod recognizes it and declares that you're ready to sync. You must select the sync option from Notpod, not from iTunes.
