Welcome to the wonderful world of the SGS2! I have also come from an iPhone (3G) and here's my opinions to your questions:

1) I found the best way was to just play around with it and work out what does what. So far (touch wood!) I have not managed to do something I haven't been able to undo.
2) I have only heard bad things about the hubs so I personally have avoided them, and just use the official twitter and facebook app's which are free from the app market
3) I don't have this on o2 in the UK, but have you tried getting rid of them the same way you would an app? (long hold it and drag it to the bin at the bottom). Possibly it may be that you need to root it to get rid though, and some of the more tech savvy guys on here can advise on that
4) same as above, people who know more than me can help! But rooting to me is the same as jailbreaking
5) I pretty much went and got all of the same app's I had on my iPhone to start with. So far, I have found these little gems:

NoLED - is great for giving you notifications on the lock screen.
Battery Solo Widget - i use to let me know percentage use of battery. Phandroid - of course for keeping up to date on here & the site.
Androidify - is pretty funny to make an android version of you.
3G watchdog - i use to let me know when i'm near my data allowance (although can't confirm how accurate it is as I have not yet gone through a billing cycle)

Thanks mate!..Ill give all of this a try including the deleeting a...How did you get your contacts and music across?..Contacts i can think of copying them to the sim ..Is there a simpler way.And music? Tunesync seems to be the one thing but it apparently only copies to an sd card and i dont have one.

hah ia it worked mate :P thanks!..They just packed so much junk in there so annoying

Great stuff!

I haven't put any music on it as yet, but from what i've read it's as easy as setting your phone to USB Mount status (via the settings) and plugging it into your computer. There are apps available but I think the good ones will cost ya to sync with iTunes.

As for the contacts, I did it the old fashioned way, by sitting down with my old phone and adding them all manually into my SGS2! I did save them to google contacts though, so now they sync seamlessly with my gmail account

Aha i see...looks like its going to take a little time to adjust..Ahh :P..Im not too keen on buying an app right now..im going to try wireless syncing :P lets see if i can do it myself xD

Yeah, definitely! As i said, I've had the phone for about 3 weeks now and am loving it so far. Whenever I get confused or frustrated about not being able to do something, I check on here and there's usually someone else who has experienced the issue and other people have given advice so it's all good :)

I find it sooo weird when I use my girlfriend's iPhone 3GS now as I'm so used to the navigation of SGS2 and android!

im loving it within a few hours :P haha..cant wait till i can finally use it properly

omgomg hahah this phone can download songs directly from the phone xD:p

I know! I was so surprised when I found that out too! Honestly, there is so much more you can do on Android that Apple won't let you do on iOS. I still love Apple and have an iMac and MacBook at home, but Android is definitely better for users who like to do their own thing, rather than being told "this is the best".

haha..Yea andorid seems a lot more customisable..Btw any idea why whenever i try to donwload any in game DLC it starts downloading and midway through the connection drops

Also i cant for the life of me figure how to get it into usb mode..Like i plug it in then it automatiucally goes into that mode.I transferred a file and thene exited it.But then how od i go back to that mode? there seems to be no other way apart from pulling the cable out and in?

Yash, I:m using a Iphone 4 right now. I was wondering if you just plugged your sim card from your iphone into the sim free Galaxy s2 and it will work?

For Usb mode try this

Settings
Wireless and networks
USB utilities
Press the connect button and Viola

Yep, this is how I got my music on my SGS2 last night. Just had to connect the USB cable after pressing the connect button, then a nice little android appeared with a 'connect now' button which then instantly brought up 'NO NAME' storage device on my iMac desktop. Then i just went into it, created a new folder called Music and drag/drop files into it and hey presto :) Just ahd to 'disconnect now' to my little android friend and unplug the cable to listen to all my ace tunes

Btw any idea why whenever i try to donwload any in game DLC it starts downloading and midway through the connection drops

I haven't downloaded any in-app content yet so not sure about this. Is it in a specific app or on any app you try to get DLC from?

Youll have to use an adapter, cause of microsim

Now to root :P and to get social hub to work (even thought i wont use it.Just want to see if it works)
